How to make crispy tofu

Crispy tofu tofu is a simple dish, but the details matter if you want to get it right. Here’s how you can make it at home.

  1. Cut tofu into 1 inch cubes.
    • They should all be the same size so they fry at the same rate
  2. Sift flour, starch and baking powder into a large plate.
    • Add salt and pepper seasoning then
  3. Use a paper towel gently to pat dry the tofu cubes
  4. Put the tofu cubes into the mixture
    • Roll them around evenly and thinly coat all sides
    • Remove excess flour
  5. Heat up oil in a pan over medium-high heat
    • Oil should cover the entire surface
    • First, check if the oil is ready
      • Place a test piece of tofu
      • Bubbles should appear straight away
    • Gently put in rest of tofu
    • The tofu pieces should not be touching! Leave space
  6. Use chopsticks/tongs to flip tofu to ensure each side is evenly fried
  7. Transfer to a plate lined with paper towels on both sides, to absorb excess oil
  8. If frying vegetables (e.g. bell peppers), or spices (e.g. garlic), drain some of the oil and cook it in the residual
  9. Enjoy!
